Thank you WendyP!
Since my parents cannot cook meals anymore, I will be making them a nice dinner. My plan is for a prime standing rib roast. It's been a long time since I have tackled this meal, but I am confident (thanks Anne Burrell!). LOL!
I was hesitant at first due to cost, but b/c of COVID (either fear of infection or restrictions), myself and my parents don't travel, vacation, or even go out to eat. It's been a LONG 3 years! Besides, with my parent's health issues, a "sit-down" meal at a fancy restaurant is just a NO-GO anyway now. So a little voice popped in my head, "If not now, when? Life is fleeting, splurge for the meal & enjoy this time with your parents!" So that is exactly what I intend to do!
I hope you have a wonderful weekend in the Land Down Under!
I also extend Easter well-wishes to all the MIP members!

Hi PosiesandPopies, was lovely to hear from you, I hope by this time you have cooked the most lovely meal for your Mother and Father, and yourself as well, and it turned out the way you wanted it to. I can smell it and taste it from where I live.
I, like your Mum and Dad, have health issues, and my daughter cooks a lot for me. I do some for myself but it is so painful, also with the Covid here, I don't venture out much only when I have to. But because I have so many food allergies, I wouldn't be able to eat anything anyway, I just sit and watch everyone eat.
My beautiful daughter, has just made me some Marshmallows, and has perfected some Violet Crumble. I feel I have won the Lotto, as I am not a cook. So over Easter, when everyone is eating wonderful Chocolates, I have my Marshmallows, and Crumble, I don't feel so alone, just watching others eat what they have. Most times it doesn't worry me, as it is just the way it is,but sometimes, it does, I feel alone, and isolated.
So, as My Daughter is to me, you are a Darling, to do what you are doing for them, they are lucky to have you in their lives, as not all Adult Children are good to their Parents.
Love WendyP.

Whatever you will or will not be celebrating, easy does it, keep it simple, and let us all see the beauty around us. Lyne. :)
