this is better than pie.
preheat oven to 350
1 large can pumpkin
1 large evaporated milk
1 cup sugar
3 eggs
¼ tsp cinnamon
these are mixed together with a mixer and dumped in a lined with wax paper 9X13 pan
1 box yellow cake mix
1 cup chopped walnuts
2 sticks butter melted and cooled
spread 1/2 the mix (dry) over the pumpkin in the pan, and sprinkle the nuts on, add the other 1/2 cake mix, then pour the butter on to sorta soak the cake mix(i use a spoon)
Bake at 350 for 50 to 60 minutes. Cool a few minutes and invert
and remove wax paper. referigerate When it cools completely frost.
Frosting
8 oz cream cheese
3/4 cup cool whip
½ powder sugar
to serve cut into 2X3 inch squares and place in cupcake papers and sprinkle with powdered sugar (store in refer)

I have a question though, do you mix the cake mix as per the package instructions or does it go on the pumpkin dry?

Umm Edna, This sounds good, dare I ask a few questions? Like the exactly how do you mix this? Also you mean for it to be chilled in the fridge?

I use a smililar recipe but never frosted. Also try Spice Cake mix. Yummy.

In addition to the option of spice cake, my recipe differs in the it says 1/4 to 1/2 tsp salt and instead of butter calls for 3/4 cup of melted margarine.
The directions call for
Bomgine the punpkin, evaporated milk, sugar, eggs, cinnamon and salt and mis well. Pour into a 9/13 inhc baking pan sprayed w/ nonstick cooking spray, sprinkle the cake mis and nuts over the top. Drizzle w/ margarine.
I would have already made this except my A woke up in the middle of the night and drank my can of evaporated milk. Ugh...got to go get another one.

I just wanted to let you know that I made "that pumpkin shi#" yesterday and it was a huge success! My aunt and sis and all the kids loved it. Thanks for sharing the recipe. I'm going to make another batch tonight to take to a Christmas dinner tomorrow.
